This past weekend, I wanted to make something refreshing to beat the summer heat. Always a fan of lemonade in the summer, I decided to adapt this recipe from Host the Toast for watermelon mint lemonade.

imageHere’s what you’ll need:

  • 6 cups of cubed watermelon, with any black seeds removed
  • 1/2 cucumber, peeled, sliced and quartered
  • 1/4 cup packed mint leaves, broken into smaller pieces
  • 1 cup of lemon juice (squeezed from ~4 lemons)

Here’s what to do:

Step 1. Put all the ingredients in your blender and puree. If you have a small blender like me, divide the ingredients in half and do it twice.


(This was round 2, hence the watermelon mush at the top.)

Step 2. Pour the puree into a pitcher through a fine strainer. This will help to remove the pulp, seeds and little bits of mint leaf.

Step 3. Add about a cup and a half of water, or if you want to have a little fun, substitute some of that water for vodka or white rum. Since I was serving 6 people, I put in 6 oz. of vodka and then added another 6 oz. of water to make up a cup and a half.

Step 4. Pour into glasses (or mason jars), garnish with lemon slices or watermelon wedges, and enjoy!


Note: this recipe made only 6 small glasses. Double the recipe if you have a big group.
